To help you eat more beans we have a recipe by Dr. Duke as well - a delicious Bean Soup.

ARTICLE: Beans

From The Green Pharmacy Guide to Healing Foods by James A. Duke, PhD

Few foods offer the unique combination of healthy nutrients and easy accessibility that beans do.  Eating more can provide a multitude of benefits.

Nutrient Nuts and Bolts: Beans get a lot of good press for being low in fat and high in protein, which makes then a great alternative to animal-based protein sources like red meat.  They're also brimming with soluble fiber.  This means that they are adept at whisking cholesterol out of your system via the intestines, making them good for your heart.

A lesser-known benefit of beans, though, is their high levels of isoflavones, compounds that are similar in structure to the estrogen produced by your body (which is why they are also called phytoestrogens).  These isoflavones may ease the symptoms of menopause, prevent some forms of cancer, reduce your risk of heart disease, and improve your bone and prostate health, among other benefits.

How to Get More: The nice thing about beans is how easily you can add them to any meal.  Pour them into soups and salads or use them in spicy Mexican dishes.  You also can't go wrong with hummus, a mix a chickpeas, lemon juice, and garlic often served with pita bread or crackers.  Or try substituting tofu for meat in some of your main dishes.

Making the Most of Them: Dried beans may give you a slight nutritional edge, but not that much, so if you don't have time to soak and prepare beans, don't worry.  You can still gain a great benefit from canned beans.  They're often high in sodium, though, so you may want to drain and rinse them before using.

RECIPE: Bean Soup

Dr. Duke says "Legumes have so many beneficial effects that I try to eat them every day.  One of my favorite ways is in a bean soup."

·         1 cup dry beans soaked overnight, save soaking water*

·         1 ½ cups diced carrots**

·         2-5 whole cloves of garlic

·         ½ - 1 onion chopped

·         Curry powder

·         Hot sauce

·         Black pepper

·         Extra virgin olive oil

·         Raw chopped onions

·         Cilantro

DIRECTIONS:

1.  Soak beans overnight.  KEEP BEANS IN THE SOAKING WATER and cook the beans at a very low simmer for one to two hours with the carrots, garlic, onion, curry, hot sauce, and black pepper.

2.  Garnish the beans with a little drizzle of olive oil and sprinkle with chopped onions and cilantro.

*Note from Dr. Duke: Everyone else throws the soaking water away the next day, but not me - even though the water is flatugenic, some of those flatus-inducing compounds might prevent cancer.)

**a folk remedy for reducing flatus.

NEWS/FEATURED PRODUCT: The Green Pharmacy Guide to Healing Foods

The Green Pharmacy Guide to Healing Foods - Proven Natural Remedies to Treat and Prevent More Than 80 Common Health Concerns by James A. Duke, PhD

Upon its publication more than a decade ago, Dr. James Duke's The Green Pharmacy quickly set the standard for consumer herb references. A favorite of laypeople and professionals alike, the book sold more than a million copies and solidified the author's reputation as one of the world's foremost authorities on medicinal plants.

In his new book, Dr. Duke turns to the broader and even more popular subject of food as medicine, drawing on more than thirty years of research to identify the most powerful healing foods on earth.

Whether he is revealing how to beat high cholesterol with blueberries, combat hot flashes with black beans, bash blood sugar spikes with almonds, or help relieve agonizing back pain with pineapple, Dr. Duke's food remedies help treat and prevent the whole gamut of health concerns, from minor (such as sunburn and the common cold) to more serious (like arthritis and diabetes).

Dr. Duke has assigned a rating to each remedy, according to his evaluation of the available scientific studies and anecdotal reports. Many of the healing foods recommended are proving so effective that they may outperform popular pharmaceuticals--minus the risk (and cost).
