I love the personal experiences that Dr. Christopher shares about the herbs. We learn about his earliest experiences with burdock as a child. His mother had sent him up the hollow to take a message to neighbors who lived about a mile away. On the way, he discovered some large plants with big leaves and sturdy stalks. He gathered a large armful of the
leaves and stalks and joyfully presented them to his mother so she could make some rhubarb pie. She laughed and told him it was burdock, not rhubarb. He was disappointed, of course, and they threw away the herb. If they had known, he recalled, they might have peeled, chopped and low-heated the stalks for a good green vegetable dish, reported to taste very much like asparagus.

Sarsaparilla Root Beer by Dr. John R. Christopher, MH, ND
Ingredients:
2 ounces Sarsaparilla root
2 ounces Sassafras rootbark
1 ½ ounces wintergreen herb
½ ounce tansy
1 pint molasses
Directions:
Simmer the herbs gently in water for about a half an hour. Strain. Add Molasses. When cool, add just a pinch (about ¼ teaspoon) of baking yeast or wine yeast. After two hours add 2 ½ gallons of lukewarm water. It will be fizzy in five or six hours and then should be bottled in clean bottles, well capped and kept in a cool place. This is a good blood
cleanser and a delightful cooing beverage as well.
