A salad box is like having a salad bar in your fridge ready and waiting for you to make good use of it. It is prepared by putting small containers of salad toppings into a larger container, so all your favorite salad ingredients are in one convenient place. This makes it so you don’t have to dig through the fridge to find all the things you want to make a salad for dinner, and then have to
chop and slice them so you can use them. All the things you need for a salad are already prepared, chopped, sliced and ready to go. It takes a little preparation time to put it together but it is worth the effort when it comes time to make a salad.
I hadn’t done a salad box for a long time. I put one together a few weeks ago and the next day I came down with flu-like symptoms and my whole body ached. I didn’t feel like eating or moving for a couple of days, but when I finally did get hungry, I was so grateful that I had prepared a salad box when I did. I took it out and quickly had a salad prepared and it was
delicious.
To make a salad box first prepare your lettuce and other greens. Leafy green, Romaine and other lettuce are best prepared by washing well, tearing into small pieces, and spinning in a salad spinner or drying by some other means. It will stay fresh much longer by tearing instead of chopping or cutting. Store the lettuce in a container or sealed bag. Use other greens like kale or spinach.
Next, choose a few veggies like bell peppers, cauliflower, broccoli, radishes, carrots, celery, tomatoes, cucumbers, mushrooms, beets, onions, or whatever you like. Chop the vegetables into small pieces and use small containers to store them. Berries, olives, sprouts, beans, or sunflower seeds are also great options to include in your salad box. Find a tote that will easily fit on a shelf in your fridge and put your toppings in small individual containers and keep them in the tote. The small
containers don’t need a lid because the lid is placed on the tote and keeps everything covered and fresh.
Use your favorite salad dressing or make a couple of healthy dressings to use. Assemble your lettuce and toppings on a dish, add dressing and you have a delicious, fresh, healthy salad. Salad bars are great so why not have one in your fridge you can use every day?
After using the salad box for a few weeks my husband commented how much he enjoys it. It is so convenient, and we are eating a lot more salads than we had before. So, try a salad box. You can make it however you like and always have a salad ready in minutes.

1 Tbs minced fresh basil or 1 tsp dried
1 Tbs minced fresh dill weed, or 1 tsp dried
Place the cashews, water, lemon juice, garlic powder, onion powder and salt in a blender and process until smooth and creamy. Add the basil and dill weed and pulse briefly, just to mix.
